Victoria Strawberry Cake - This delicious cake is a combination of spongy cake, sweet cream and tangy strawberries. After just the first bite, you will want to have it for breakfast, lunch , tea and dinner! It is the perfect recipe even for amateur bakers! I remember this was the first fancy cake I ever baked, and everyone loved it! I got this recipe from my sweet cousin, who bakes amazingly well.
Victoria Strawberry Cake serves - 8-10 Duration - 10 mins ( Prep time) 25-30 mins (Baking time)
Please note: (The quantity is for one cake. So you need to double the quantity below to make two cake , to layer it)
Ingredients
Self raising flour - 175 grams
Baking powder - 1 tsp
Butter - 175 grams
Sugar - 150 grams
Eggs - 3
Filling & Topping
Whipping cream - 450 ml
Raspberry jam 1 tbsp
Strawberries (sliced)- 18
Method -
Preheat the oven to 180 *c . Grease and line the bases of two 20 inch cake tins.
Sift the flour and baking powder into a bowl and add the melted butter , sugar and eggs.
Mix together , then beat well until smooth.
Pour the mixture evenly and smooth the surface. Add some chopped strawberries on it.
Bake in the pre heated oven for 25 - 30 mins, until well risen and golden brown, and the cakes feel springy when lightly pressed.
Repeat the above step to bake another cake.
Leave it to cool. then turn out and peel the baking paper.
In a deep bowl, add cream, jam and beat together . keep in the fridge for half an hour.
Sandwich the two cakes together with the prepared cream and chopped strawberries. place the second cake on top and cover it with cream.
Keep well covered in the fridge for 2 hours. before serving.
