Chicken baked bread - This is a great dish to make during ramadan for iftar, its yummy, and easy to prepare. you can either bake it or cook it on low flame in a deep dish, but I personally like to bake it! as it requires no assistance! You can make it for a breakfast party or as an evening snack too! I generally use left over chicken, from the previous day, I just shred it and add. but if you dont have left over chicken then just boil a chicken breast with salt and pepper and ginger garlic paste , and shred it.
Chicken baked bread Serves - 4-5 Duration -prep time- 15 mins : baking time - 20-30 mins
Ingredients For the filling
Boneless chicken - (shredded) - 1 cup
Onions- 3 (small) sliced
Capsicum - (yellow) - 1/2 thinly sliced
Mushrooms - 4-5 (thinly sliced)
Green chilli - 3-4 slit
ginger garlic paste - 1 tsp
red chilli powder - 1 tsp
turmeric(haldi) - 1/4 tsp
garam masala- 1 pinch
Coriander leaves - (chopped)
Salt - 1- 1/2 tsp ( or to taste)
Oil - 2 tbsp
For the batter
Bread slices - 5
Egg - 3
Milk - 1 cup
baking powder - 1 tsp
black pepper - 1/2 tsp
coriander leaves - finely chopped - 1 tbsp
Butter - 1 tsp
Red Chilli powder - 1/2 tsp
Boil the Chicken breast with salt, pepper and ginger garlic paste .Once cooked , shred well.
Now heat oil in a pan, add sliced onion, green chillies, salt and saute well.
Once the onions turn transparent add ginger garlic paste, and saute
Add the chicken , yellow capsicum, mushrooms, and mix well.
Add the red chilli powder, haldi. add chopped coriander leaves, once dry, cook for 2-3 minutes. remove from heat and set aside.
Now take the bread slices, remove the edges, and cut into small pieces,
Blend it with eggs, milk ,baking powder, chilli powder, black pepper, salt.
Now take a baking dish, and grease it well with 1 tbsp of butter.
Pour half of the batter, then add the chicken filling, (dont forget to remove the green chillies) and pour the rest of the batter.
Preheat oven to 180*c .
Place the baking dish inside the oven , and let it bake for 20 - 30 mins (or until a toothpick comes out clean when poked in the centre). Once almost done, sprinkle chopped coriander leaves, on it.
Delicious Chicken baked bread is ready to be served.
