Japanese Yakisoba Noodles (Stir-fry Noodles)

Japanese Yakisoba Noodles - This Delicious Stir- fry Japanese style noodle, is soo soo delicious that it doesn't need any side. Its perfect on its own. Its saucy, and full of delicious veggies. If you cant find the yakisoba noodles, you can use any thin egg noodles of your choice. This recipe was such a hit! I have already made it thrice at my place, and after lots of experimenting , I found the perfect one for me!
I am always in search for the best noodles in town.This quest started ever since my college ended. There was this amazing little restaurant named noodlehouse near our college which served a very delicious noodle dish called singapore chilli noodles. Omg! it was divine!Sadly, the restaurant was closed down in a few years. 

I ve eaten in the fanciest restaurants ever since but I have not come across anything that comes even close to it! So, you do realize my obsession with noodles. 
I still haven't found anything close to that. ( Will let you know , once I do)
But the Japanese Yakisoba Noodles is really really yummy too! And one of the second best noodles Ive had!

Japanese Yakisoba Noodles 
Serves - 4-5                                                                                                                                                                                               
​Duration - 20 mins


Ingredients
  1. Yakisoba Noodles (or any other thin noodles of you choice) - 400 grams (2 packets)
  2. Mushrooms  - 1 box ( sliced)
  3. Red pepper  - 1/2 (thinly sliced)
  4. Yellow pepper- 1/2 (thinly sliced)
  5. Onion - 1 small (cubed)
  6. Garlic- 5 cloves (chopped)
  7. Spring Onions - 2 full (chopped)
  8. Green chillies - 4 nos
  9. ​Chinese Cabbage - 6-8 leaves (cut in cubes)
  10. boneless Chicken - 1 breast cut into small cubes
  11. Salt - 1tsp ( depending on taste)
  12. Red Chilli Powder - 1-2 tsp (depending on taste)
  13. Oil - 4tbsp 
Yakisoba Sauce
  1. Soya Sauce - 2 tbsp
  2. Oyster Sauce - 3 tbsp 
  3. Worcestershire  Sauce - 2 tbsp 
  4. ​Vinegar - 1tsp
  5. Ketchup - 2 tbsp
  6.  Brown sugar/honey - 1 tsp
  7. ​Chicken stock or  seasoning - 1 cube / 1 tbsp

​Method -
  • ​Wash and cut all the vegetables and the chicken , keep aside.
  • In a small bowl mix all the ingredients of the sauce and mix well. set aside.
  • Now take a cooking pot, and fill with water, bring the water to boil, add the noodles.
  • Once the noodles are almost done, strain it.And put it in cool water for 5 mins. 
  • In a big pan, heat 2 tbsp oil , and stir fry the noodles in batches, till crispy. And keep aside. (this step is optional, it makes the noodles nice and crispy)
  • Heat oil in a wok, add the garlic, saute for a min, now add the onions, peppers, and chicken  stir fry.
  • Add  the chinese cabbage , mushrooms ,salt, red chilli powder.
  • Add the yakisoba sauce, and mix well.
  • Add the spring onions.  
  • ​Add the noodles to the  the vegetables. and mix well.
  • Serve Hot! 
  • Delicious Japanese Yakisoba Noodles is ready to be served!
