Aloo-Gosh ka korma
(Mutton & Potato Curry)

Aloo Gosh Ka Korma is a delicious mutton curry with big chunks of fried potato served with bagara khaana  (fried rice). Rich in flavor and comes a close second to  biryani, when it comes to making something special on fridays. We make this even in daawats (parties) at times, and its always a hit among  all young and old. 



Aloo Gosh Ka Korma
(Mutton Curry)

Serves - 4-5                                                                                                                                                                                                Duration - 60 mins

Ingredients

1. Mutton - 1/2 kg
2.Onions - 3 big
3.Tomatoes - 3 big
4.Oil - 1 cup
5. Yoghurt - 1/4 kg
6.Potatoes - 2 big ( peeled and cut as round circles)
7.Garam masala -
 (cinnamon, cloves and elaichi) 3 each 
8.Ginger garlic paste - 
9.green chillies- 6
10. mint leaves - handful
11. coriander leaves - handful
12.haldi - 1/2 tsp
13. red chilli powder - 2 tsp (or to taste)
14 . Salt - 1 and 1/2 tsp (or to taste)
15. coconut powder - 2 tbsp mixed in 1/2 cup water  (optional)
16. lime - 1

​Method -
​
* Heat oil in a wok or pressure cooker, add the garam masala (cinnamon, cloves and elaichi) , add the onions, and saute till golden brown. Once the onion changes color add the ginger-garlic paste and saute for 2 mins. 
*Now add the washed mutton, salt, red chilli powder, green chillies and haldi. Mix well. 
*Add the tomatoes, and mint and coriander leaves, and cook covered for 5 mins till tomatoes become tender.
*Once tomatoes are tender add the whipped yogurt.mix well and leave it to cook.
*If u are using a pressure cooker, you can close the lid and keep it on low flame for 10 - 15 mins. And if u r not using a pressure cooker it will take 30 - 40 mins at least for the mutton to become soft and tender. 
*In a pan , heat oil and fry the potatoes till lightly brown.
*Once the mutton gravy is cooked, add the fried potatoes and cook for 10 mins. ( or till potatoes are cooked)
* Now add the coconut powder in water mixture and squeeze a lime in it. 
*If you dont want the gravy to be too thick, you can add a cup of water to it, and cook for 5 mins.
*Garnish it with chopped coriander leaves. And Aloo-Gosh ka korma is ready to be served with hot Bagara khaana (fried rice) or roti.

Cooking tips -
- Make sure the yogurt is whipped well. 
- Before frying the potatoes add a little bit of salt and red chilli powder to it and mix well. so the big potato pieces wont be bland.
​- make sure to always mix the coconut powder in water before adding so it will dissolve easily in the gravy.
