Ande ki Mithai / Egg pudding - Ande ki mithai is a famous south Indian desi dessert, commonly made in the Muslim community. It has just a few ingredients and baked like a cake for 20 - 25 mins .It is easy to make and hardly takes 10 mins before you pop it into the oven. We usually make this for eid and get together s, and is a favourite at our place. I was first introduced to this amazing dessert from my in-laws side, and it soon became a personal favorite. I learnt this delicious dessert from my ammi (mother in law) ,who is an expert at desi desserts. So here goes , Do try it and let me know how it comes out.... Ande ki Mithai Serves - 8-10 Duration - 30 mins
Ingredients
Almond - 1 Cup
Eggs - 6
Sugar - 1 cup
Milkmaid - 1 tin
Ghee - 1/4 cup
Saffron - 1 pinch
Method - Step 1
Soak the almonds in warm water for half an hour, peel it, grind with 3 tbsps of milk, make a paste and keep aside.
Step 2
In a mixing bowl, add the eggs, sugar , milkmaid, ghee and saffron , beat well.
Do not over-beat the mixture, just for 30 secs, till well- combined.
Add the almond paste. mix well.
Step 3
Preheat oven 180* c.
Grease a baking tray, with some ghee, now pour the mixture into the tray.
Bake for 20 - 25 mins or until the toothpick comes out clean when pricked in the centre.
Remove the tray from the oven, once it has cooled down cut it into squares.
