Baked Stuffed Capsicum & Garlic Rice 


Baked Stuffed Capsicum & Garlic Rice Bake -
Capsicum stuffed with minced meat and baked on delicious garlic butter rice topped with mozzarella cheese. This dish takes stuffed capsicum to a whole new level. We generally just fry the stuffed capsicum and have it with roti. But this was amazing with the garlic butter rice. Baked Stuffed Capsicum & Garlic Rice Bake
Serves - 4-5                                                                                                                                                                                             
Duration - 45 mins

Ingredients

  1. Coloured Capsicum - 4
  2. Rice - 3 cups
  3. Minced meat - 250 grams
  4. Mozzarella cheese shredded - handful

For Minced meat preparation 
  • Ginger garlic paste - 1tsp
  • Onion - 4 medium
  • Tomato - 2 medium
  • Green chillies - 3 nos
  • Coriander leaves - handful (chopped)
  • Salt - 1 & 1/2 tsp (depending on taste)
  • Red chilli powder - 1 and 1/2 tsp
  • Haldi - 1/4 tsp
  • Zeera powder - 1/4 tsp
  • ​Chaat masala - 1/2 tsp
  • Garam masala- 1/4 tsp
  • Oil - 3 tbsp

For Garlic butter Rice
  • Basmati Rice- 3 cups
  • Butter - 3tbsp
  • Oil - 1 tbsp
  • Garlic - 8-10 cloves (chopped)
  • Salt - 1  tsp
  • Chicken cube- 2 (optional)
  • Oregano - 1tsp



​Method -
Minced meat preparation
  • Wash the minced meat thoroughly, put it in a strainer, set aside.
  • In  a wok, add oil, and the chopped onions, until golden brown, 
  • Once the colour changes, add ginger garlic paste and saute.
  • Add green chillies, and the minced meat.
  • Now, add salt, haldi, red chilli powder, garam masala,chaat masala, zeera powder. mix well.
  • Now add chopped tomatoes and chopped coriander leaves and mix well.
  • Let it simmer on low heat.
  • Once the water dries up, remove from heat and set aside.

Garlic Butter Rice
  • Heat water in a deep cooking dish , Once it comes to boil, add the basmati rice.
  • Once the Rice is almost cooked , remove from heat, strain it and set aside.
  • Now in a wok, add butter, once it melts,add 1 tbsp oil, add garlic, salt, chicken stock cubes, oregano, saute for 2-3 mins.
  • Now add the rice , and mix well.


Filling
  • Remove the stem of the capsicum , and cut out a hole there, remove the seeds.
  • And stuff the capsicum with minced meat mixture.(Dont forget to remove the green chillies)
  • Take a pan, add some oil, and pan fry the capsicum, until colour changes, turn and repeat.
  • Once the Capsicum is well fried, Remove from heat and set aside.

Assembling
  • Take a deep baking dish, and Remove the garlic butter rice on it.
  • Place the stuffed capsicums on it.
  • Sprinkle some mozzarella cheese on it.
  • Place it in the oven for 10-15 mins, at 180*c
  • Once the cheese melts,remove from the oven.
