Jhingey ke Khaare Seviyaan (Prawn Vermicelli Noodles)
Khaare Seviyaan ( Vermicelli Noodles) is a staple in every south indian home, eaten for breakfast / dinner, at our place we mostly make it for dinner, as little E loves it and demands to have it every week. He even loves to pack the left overs for lunch and takes it to school the next day! You can substitute the prawns with chicken, mutton, kheema ,egg, paneer (or tofu) or you can also omit the prawns all together and make it plain and simple without any protein. So, here goes... hope u enjoy it!
Jhinge ke khaare Seviyaan (Prawn Vermecilli Noodles) Serves - 4-5 Duration - 30 mins
Ingredients
One packet of Vermecilli noodles - 450grams
Onions - 4 medium sized
Tomatoes - 4 medium sized
Oil - 1/2 cup
Prawns - 25 - 30 no.
Green chilli - 5
Garam masala - 3 pc each
Chopped Mint leaves - (handful)
Chopped Coriander leaves - (handful)
Lime - 1 small
Yoghurt - 1/4 kg ( 1 1/2 cup)
Red chilli powder - 2 tsp or to taste
Haldi - 1/2 tsp
Salt - 1 1/2 tsp or to taste
Ginger garlic paste - 2 tsp
Water 1 & 1/2 Cup (300 ml)
Method - * Wash prawns, devein and set aside. *Heat oil in a wok , Once it is hot add the garam masala, onions and green chilli. Once the onion turns golden brown add the ginger garlic paste and saute for 2 mins.Now add the prawns, haldi, red chilli powder, salt and saute. *Add tomatoes and fry, till it becomes tender. Once the tomatoes are tender add the whipped yogurt. and add the water, let this simmer for 5 mins. *Add the mint and coriander leaves. And remove from heat and set aside *Dry roast the vermicelli noodles. until slightly golden brown. *Now add the roasted vermecilli to the prawn masala,mix well. * And keep it closed on low heat (i.e on Dum) for 10 mins. * Thats it! Yummy Khaare Seviyaan ready to be devoured! Serve hot with ketchup or homemade tomato achaar. Enjoy! =)
