Creamy Chicken Rice -This is a delicious creamy rice dish, with the perfect balance of spices. Everyone at home loved it so much, that little E wanted it for dinner as well. It is a big hit for all, young and old. First you need to make the white creamy chicken qorma, then add boiled rice and give dum (like in biryani.) It is not spicy, so the kids love it too! Creamy Chicken Rice
Serves - 5-6 Duration - 60 mins
Chicken - 1 kg
Rice - 5 cups
Oil - 1 Cup
Onion - 3 big (sliced)
Cream - 250 ml
Yoghurt- 1 1/2 cup
Milk - 150 ml (1/2 cup)
Garam masala powder - 1/2 tsp
Cloves, Cardamom - 3 each
Cinnamon - 1 inch stick
Kasuri Methi - 2 tbsp (crushed)
Ginger-garlic paste - 1 1/2 tsp
Black pepper - 1tsp
Green Chillies - 6-7
Zeera - 1 tsp
Black pepper corns - 1/2 tsp
Salt - 1 1/2 tsp
Coriander leaves (handful) - for garnish
Mint leaves - 5-6 leaves
Cashew- handful (grind it with 2 tbsp milk, and make a paste)
Wash chicken , strain and marinate it using salt, lemon juice, pepper and ginger garlic paste. keep aside.
Wash and Soak rice in water
Take a smal pan and add one sliced onion, the green chillies, coriander leaves, mint leaves, and saute till the onions turns golden brown. Let it cool down for a while.
Once cooled, grind it into a paste.
Heat Oil in a wok, add the cinnamon, cloves and cardamom, saute,
Then add the green paste. saute. add whipped yogurt, salt and mix well.
Add some milk, and add the marinated chicken in it.
Cover the pot and let it cook.
After 10 - 15 mins , open the lid
Add the crushed kasuri methi. saute for 2 mins.
Now pour the cream, mix well. Add the cashew paste as well. and let it simmer
Meanwhile, Fry the rest of the onions till golden brown. add it to the wok and mix well.
Taking a large cooking pot, and boil water, add the soaked rice and salt, once the rice is almost done (80 % cooked) strain it.
Add the rice on top of the chicken gravy, and add 2 tbsp of ghee.
Cover it using Aluminium Foil, cover the lid. and keep it on dum . (that is place the cooking pot on an iron tawa, and keep on low flame.
let it be on dum for 10 - 15 mins.
Delicious Creamy Chicken Rice is ready to be served!
Garnish with fried onions and chopped coriander leaves.
