Sweet n Sour Hongkong Chicken - So I was recently arranging my wardrobe when I found an old recipe book of mine!lol back when screenshots werent a thing! I had written down a few tried and tested recipes (during college, Ha! I always had a thing for cooking! ) So anyway, this recipe was on the first page , and I have no idea from where a copied it! but I just had to try it tonight, and it turned out delicious, I was a little skeptical of adding pineapple in the gravy! but trust me it was sooo good! I made it along with burnt chilli garlic rice. but you can try it with Chinese Fried Rice too, im sure it'll taste delicious! do try it and let me know what u guys think!
Sweet n Sour Hongkong Chicken
Serves - 5-6 Duration - 30 mins
Ingredients
Chicken boneless - 500 grams
Capsicum - 1 large
Onion - 1 large
Ginger - 1 inch(julienne)
Spring onions - 1 bunch
Green chilli - 3-4
Pineapple chunks - 1 tin
Vinegar- 4 tbsp
Chicken stock - 1/4 cup
Soya sauce - 1 1/2 tbsp
tomato paste - 2 tbsp
Corn flour - 1-2 tbsp + 1/2 cup water
Salt - 1 tsp (or according to taste)
Red chilli powder - 1 - 2 tsp
Brown sugar - 1 tsp
Oil - 3 tbsp
For Marination:
Cornflour - 1tsp
Vinegar - 2 tbsp
Flour - 3 tbsp
Egg - 1 whisked
Salt - 1tsp
Red chilli powder - 1tsp
Ketchup - 1 tsp
Ginger garlic paste - 1 tsp
Red food colour - 1 pinch (optional)
Method -
Place the chicken in a bowl, add ginger garlic paste, salt, red chilli powder, vinegar, ketchup and marinade for 30 mins,
then add whisked egg, flour and corn flour, mix well.
Heat oil in a deep wok, and deep fry the chicken pieces, until golden brown. remove and set aside.
Now add the capsicum and onions (both cut in cubes) to the hot oil, and deep fry for 2 mins.remove and set aside.
Now take a wok , add 3 tbsp of oil to it, and half of the spring onions, and greem chillies, saute
Add the pineapple chunks, tomato paste, soya sauce, salt, red chilli powder, sugar, vinegar, chicken stock, and a cup of water.
