Stir-fried Dragon Rice

So, it is a long weekend here in Dubai, Five days of national holidays! (yay!) So my lil one ,E wanted to eat Kungpao Chicken, but I wanted to make one single dish and finish with it! (hehe) So, thats when I tried out the - Stir-fried Dragon Rice , It is delicious, colorful and  flavorful, and one of my very own creations!  *proud*
​ So, next time you feel like having indo-Chinese, do give this recipe a try, it is really yummy and will definitely hit the right spot! enjoy!


Stir-fried Dragon Rice
Serves - 3-4                                                                                                                                                                                          
Duration - 30 mins


Ingredients
  1. Red Capsicum - 1  (sliced)
  2. Yellow Capsicum - 1 (sliced)
  3. Orange Capsicum - 1 (sliced)
  4. Tomato - 1 big (roughly chopped)
  5. Onion - 2 medium (cubed)
  6. Mushrooms - 10-15no.s (chopped)
  7. Garlic - 6-7 cloves (crushed)
  8. Green chilli - 4- 5 
  9. Spring Onions - 1 ( chopped)
  10. Basmati Rice - 3 cups
  11. Oil - 1/2 cup
  12. Chicken Stock - (optional) 1 cube
  13. Soya sauce -3 tsp
  14. Tomato paste- 2 tsp
  15. Vinegar - 1 tbsp
  16. Red chilli powder - 2 tsp
  17.  Salt - 1 or 1 1/2 tsp (or according to taste)
  18. Chicken (boneless) - 500 grams
For chicken  marination 
  1. Ginger garlic paste - 1 tsp
  2. Salt- 1 tsp
  3. Red chilli powder - 1 and 1/2 tsp
  4. Soya sauce - 2 tsp
  5. Green chillies slit - 3 
  6. Cornflour - 1 tbsp
  7. Red colour - 1 pinch

​Method -
​
  • Wash and soak rice in water for 30 mins.
  • Cut the chicken breasts into small cubes, add ginger-garlic paste, salt, red chilli powder, soya sauce, slit green chillies, red food colour and cornflour , mix well. and keep aside for 10 mins.
  • Heat oil in a deep frying pan, and fry the chicken pieces until golden brown. Remove the chicken pieces, set aside.
  • ​Now heat oil in a deep wok, add the garlic , onion and green chillies, saute.
  • Then add the mushrooms, capsicum and tomatoes, stir-fry on high heat,
  • Add salt, red chilli powder, soya sauce and tomato paste. and the chicken stock cube. mix well.
  • Remove from heat.set aside
  • In a cooking pot, boil water,add salt and a tbsp of oil. once the water starts to boil, add the soaked rice, let it cook . Once its 80% done, remove from heat and strain it.
  • Mix the rice into the vegetables, add the fried  chicken pieces  too. 
  • Close the lid and keep on dum (Place the cooking pot on an iron flat pan ) for 10 mins.   
  • Delicious Stir-fried Dragon Rice is ready to be served!
  • Serve hot with cool mint flavoured buttermilk.
