So, it is a long weekend here in Dubai, Five days of national holidays! (yay!) So my lil one ,E wanted to eat Kungpao Chicken, but I wanted to make one single dish and finish with it! (hehe) So, thats when I tried out the - Stir-fried Dragon Rice , It is delicious, colorful and flavorful, and one of my very own creations! *proud* So, next time you feel like having indo-Chinese, do give this recipe a try, it is really yummy and will definitely hit the right spot! enjoy!
Stir-fried Dragon Rice Serves - 3-4 Duration - 30 mins
Red Capsicum - 1 (sliced)
Yellow Capsicum - 1 (sliced)
Orange Capsicum - 1 (sliced)
Tomato - 1 big (roughly chopped)
Onion - 2 medium (cubed)
Mushrooms - 10-15no.s (chopped)
Garlic - 6-7 cloves (crushed)
Green chilli - 4- 5
Spring Onions - 1 ( chopped)
Basmati Rice - 3 cups
Oil - 1/2 cup
Chicken Stock - (optional) 1 cube
Soya sauce -3 tsp
Tomato paste- 2 tsp
Vinegar - 1 tbsp
Red chilli powder - 2 tsp
Salt - 1 or 1 1/2 tsp (or according to taste)
Chicken (boneless) - 500 grams
For chicken marination
Ginger garlic paste - 1 tsp
Salt- 1 tsp
Red chilli powder - 1 and 1/2 tsp
Soya sauce - 2 tsp
Green chillies slit - 3
Cornflour - 1 tbsp
Red colour - 1 pinch
Wash and soak rice in water for 30 mins.
Cut the chicken breasts into small cubes, add ginger-garlic paste, salt, red chilli powder, soya sauce, slit green chillies, red food colour and cornflour , mix well. and keep aside for 10 mins.
Heat oil in a deep frying pan, and fry the chicken pieces until golden brown. Remove the chicken pieces, set aside.
Now heat oil in a deep wok, add the garlic , onion and green chillies, saute.
Then add the mushrooms, capsicum and tomatoes, stir-fry on high heat,
Add salt, red chilli powder, soya sauce and tomato paste. and the chicken stock cube. mix well.
Remove from heat.set aside
In a cooking pot, boil water,add salt and a tbsp of oil. once the water starts to boil, add the soaked rice, let it cook . Once its 80% done, remove from heat and strain it.
Mix the rice into the vegetables, add the fried chicken pieces too.
Close the lid and keep on dum (Place the cooking pot on an iron flat pan ) for 10 mins.
Delicious Stir-fried Dragon Rice is ready to be served!
