Chinese Fried Rice is an Indo- chinese type of rice served with any type of chinese gravy. I like it best with either Kungpao Chicken or with Chilli Black Chcken gravy. Rich in flavour and delicious in taste this dish is sure to hit the right spot! Do give it a try and you will never order fried rice in a restaurant again!
Chinese Fried Rice Serves - 4-5 Duration - 30 mins
Ingredients
Capsicum - 1 big
Green chilli - 4 slit
Carrot - 1 big
Green peas - 50 grams
Sweet Corn - 1 small tin
Spring Onions - 1
Basmati Rice - 1kg
Oil - 1 cup
Chicken Stock - (optional) 2 cubes
Soya sauce - 1 tsp
Salt - 1 or 1 1/2 tsp (or according to taste)

Method -
Wash and soak rice in water for 30 mins.
Heat Oil in a big cooking pot, add half of the spring onion,green chilli, chicken cubes, capsicum, carrot, peas and saute.
add the corn and salt.
Boil water in another big pot, add salt and 1 tbsp of Oil. add the rice into the boiling water.
Once the rice is 70% cooked, Strain it.
Add the cooked rice to the vegetables, mix well.
And keep it on Dum (that is, Keep the cooking pot on an iron tawa, on low heat) for 10 to 15 mins, until rice is cooked.
Thats all! Delicious Chinese fried rice is ready to be served!
Serve hot with Kungpao Chicken or Chilli Black Chicken gravy.
