Bagaara Khaana
Fried Rice (Indian Style)

Bagaara Khaana is an indian style fried rice, it goes amazingly well with Aloo Gosht ka qorma  or Chicken qorma. Rich in flavor and comes a close second to  biryani, when it comes to making something special on fridays. We make this even at daawats (parties) at times, and its always a hit among  all young and old. You can drizzle some ghee once its cooked for delicious aroma and taste.

Bagaara Khaana
Fried Rice (indian style)

Serves - 4-5                                                                                                                                                                                        Duration - 25 mins

Ingredients
  1. Basmati  Rice - 5 cups
  2. Onion - 1
  3. Tomato - 1
  4. Green Chilli - 5 
  5. Garam Masala - (3 each) 
  6. Ginger Garlic paste - 1 tsp
  7. Mint leaves - (handful) chopped
  8. Coriander leaves -(handful) chopped
  9. Oil - 1/2 cup (200ml)
  10. Salt - 1 1/2 tsp or to taste
  11. Chicken stock (optional) - 2 cubes
  12. Ghee - 2 tbsp

​Method -
  • ​Wash rice and soak in water for half an hour.
  • Heat Oil, add the garam masala, onions, green chilli, saute till the onions turn golden brown.
  • Once the onion turns golden brown add ginger garlic paste and saute.
  • Add tomatoes, chicken cubes, salt and chopped coriander and mint leaves.
  • Drain the rice, and add it, mix well.
  • ​Now add 9 cups of water. Mix well. Cover with the lid and let it cook.
  • Once the water is evaporated and the rice is almost cooked, keep it on Dum ( that is place a iron tawa under the rice vessel and keep it on low flame.) for 10 mins
  • Drizzle 2 tbsp of ghee once the bagaara khaana is done!
  • Serve hot with Aloo Gosht ka qorma or Chicken qorma. 
  • Enjoy!
