Pasta Arabiatta

Pasta Arabiatta is an amazing tomato based saucy pasta. The perfect combination  of tangy, spicy and creamy sauce poured over and mixed with fusilli pasta.
This fusion pasta recipe is borrowed from my dear sister, and is a huge hit at our place! served with cheesy garlic bread, this dish is perfect for a small get-together or a special cozy dinner.
Try it, and I bet you will stop eating pasta at restaurants!

Pasta Arabiatta
Serves - 4-5                                                                                                                                                                                               
Duration - 40 mins


Ingredients
  1. Tomatoes - 8 medium
  2. Mushrooms - 1 box
  3. Olives (black) - sliced 1/2 tin
  4. Chicken - 2 breasts cut into small cubes
  5. Onion - 1 big (chopped)
  6. Green chilli - 4
  7. Basil- 1 tsp
  8. Oregano - 3  tbsp
  9. Parsley - 1tsp
  10. Red chilly powder - 2 tsp (depending on taste)
  11. Salt - 2 - 3 tsp ( depending on taste)
  12. Garlic (crushed) - 8- 10 cloves 
  13. Pasta (Penne or Fusilli)  - 1 packet (400 grams)
  14. Olive Oil - 4 Tbsp
  15. ​Cream - 400 ml
  16. Mozzarella  cheese (shredded) - handful

​Method -
  • ​Cut the Chicken breasts into small cubes, marinate in ginger-garlic paste , salt and pepper.
  • Boil tomatoes, peel the skin and roughly chop it and keep aside.
  • Heat Olive oil , add crushed garlic, finely chopped onion, green chillies, chopped tomatoes, 1 tbsp oregano, basil, 1 tsp red chilli powder, salt .
  • Mix well and blend it into a smooth paste after it cools down.
  • Take another small pan , heat olive oil, add the chicken, mushrooms, olives, 1 tbsp oregano,salt, 1 tsp red chilli powder.
  • Add this to the pureed sauce, and cook for 2- 3 mins.
  • Add the cream and cook for 5 mins.
  • ​Add shredded mozzarella cheese.
  • Boil water, add the pasta, 2 tsp salt and 1 tbsp oil, once its cooked, strain it.
  • Add the cooked pasta to the sauce. Mix well.
  • Serve hot with Cheesy Garlic bread.
  • ​Enjoy!


Cooking tips
  • If you are not sure about the salt and chilli powder, add little bit before blending the suace.
  • After adding the pasta, if it looks too dry, add milk and cook.
  • Add the pasta just before serving. Do not mix earlier as it will become too dry.
  • Taste the sauce, to check the salt and chilli, and if anything is less add it before mixing the pasta.
